Gathered from hives worked across wildflower meadows in Budgam. Multifloral, so the flavour shifts between harvests rather than being standardised to a house profile.
It is strained through mesh to take out wax and bee parts, and nothing else is done to it. No pasteurising, no pressure filtration. Both of those exist to stop honey crystallising on a shop shelf, and both cost it the enzymes and the aromatics that made it worth buying.
It will set solid
Raw honey crystallises, usually within a few months and faster in a cold kitchen. That is evidence it has not been heat treated, not a fault. Stand the jar in warm water for a few minutes to loosen it, and do not microwave it.
Not for infants
Raw honey must not be given to children under twelve months.
